Enjoying Simpatico Wines is about allowing yourself to taste wines that you love, or are interested in loving – as long as you have a passion for great wine!
We suggest drinking our old vine wines with spicy sausages and meats, pungent cheeses, or a great big bowl of spaghetti bolognaise (Rebecca makes a mean bolognaise, the recipe may appear on our website from time to time).
Enjoy our cabernets with a great sirloin and baked potatoes, a warm lamb salad, or even some simple soft cheeses and lavosh. We love our Viognier crisp and cool, on a warm summer’s day, with a chilli risotto marinara, or the freshest of scallops, oysters, and squid .
Of course, when you take Simpatico home, it’s important to care for your wine.
Cellaring your wine is ideal, but if you aren’t fortunate enough to have a cellar, wines should be kept in a very cool, dry place in your home. If cellared well, your Cabernet and Shiraz wines can be kept for up to 10 years (always read the label on your Simpatico wine for further detail). Your Viognier wines are best drank within the 12 months of the year of their production.
